1 lb brie rind removed & cut in small pieces
4 lg tomatoes peeled coarsely chopped
1 cup fresh basil chopped
1/2 cup olive oil
3 cloves garlic minced
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 lbs cooked pasta
freshly shredded Parmesan cheese
In a large serving bowl, combine the first 7 ingredients. Let stand at room temperature for 1-2 hours. Cook pasta and drain well. Toss with cheese mixture. Sprinkle liberally with fresh Parmesan. Serve immediately or when salad is at room temperature.
Serving Ideas: Serve with cold turkey breast and a flavorful bread.
